Taking Over London’s Pastry Scene, One Colorful Treat at a Time

Ghosts, witches’ hats, pumpkins — name any Halloween goodie, and the @meringuegirls, Alex Hoffler and Stacey O’Gorman, can make it out of meringue, a pillowy pastry made from sugar and egg whites. “It’s just so moldable, you can do anything with it,” says Alex. Four years ago, cupcakes, cake pops and macarons ruled the London pastry scene. “We decided to kick them off the top shelf and come in with something innovative and rainbow-tastic,” she says. “We wanted to make meringues the stars of the show.”

The co-founders, both trained chefs and food stylists, met in a male-dominated restaurant kitchen in London and saw a gap in the market for a baking brand with girl power at its core. They quit their jobs and started baking out of Alex’s home kitchen, testing countless recipes to get the perfect chewy-on-the-inside, crunchy-on-the-outside meringue, using all-natural ingredients for colors and flavors like pumpkin spice and coconut. Two cookbooks and more than 8,000 baked meringue kisses a week later, the girls are still going strong in their East London bakery. “Every day is a crazy meringue rollercoaster,” says Alex.
